Koshereye Signature Recipe

What could be better than chocolate and more chocolate! Chocolate sandwich cookies and a chocolate bar are combined to create this absolutely yummy Cookie Crunch Bark.

Ingredients:

8 squares semi-sweet chocolate like Schmerling (one whole bar)
1 cup coarsely chopped chocolate sandwich cookies like Oreos

Directions:

Line an 8x8−inch baking sheet with parchment or waxed paper. For thinner bark, use a larger size baking sheet.

In a double boiler or microwave, heat the chocolate until mostly melted. Remove from heat and continue stirring until melted/smooth.

Stir in chopped cookies. Pour mixture onto baking sheet lined with parchment. Gently smooth surface with offset knife/spatula or spoon.

Refrigerate at least one hour until firm. Break bark into pieces. Store in airtight container in refrigerator.

Notes:

Yield: Serves 6-8 for snacking; recipe can be doubled or tripled

Variations: Add 1 teaspoon of peanut butter to mixture when melting, or top with 1/4 cup chopped nuts or cranberries just before refrigerating.

Passover friendly: Substitute nuts or Kosher for Passover cookies for sandwich cookies.
